Big Things.

Ok, I am going to skip around in the questions because I don’t have enough time to answer the next one before I have to pick M up at preschool.  I will go back and get them all though.

 Egypt4 asks:

A few months back you mentioned there might be SOMETHING BIG happening for your family, but you didn’t offer details. Has that passed or might we be hearing more about in future posts?

Ah yes, the Very Big Thing (VBT). 

You will have to excuse me for being cryptic, but if I am going to talk about it at all, cryptic is what I can give you.  A few months ago we thought there was a decent possibility that we would have an opportunity for a huge change for the family.  Since then, probably about two weeks ago, we found out that it is unlikely to happen.  If it would happen, it is also very unlikely we would like the WAY it would happen, so that opportunity is probably out.

But all is not lost!  Once we started kicking around the idea of the Very Big Thing, we realized we don’t need to go whole hog to get the benefits we want.  So instead of the Very Big Thing, we are making plans for the Next Big Thing (smaller than the VBT, but not exactly insignifcant). 

There is a lot we don’t know about the Next Big Thing, except we are starting to arrange our lives to make it happen.  It isn’t guaranteed that we will get to do it, but I would put the odd at about 60-70% that we will actually make it happen.  The changes we need to make in the next year are mostly financial.  Next year we will have to start making some logistical adjustments and plans.   The next six months will help us decide which direction to work next year.  I probably won’t know any more than I know now until early 2008, then we can’t act on it until late 2008.

I know, this must be just about the most annoying post ever.  If you think you have a good guess as to what it is, you are probably right.  The only other thing I can say is that the Next Big Thing will enable me to knock at least 5 things off the list of 30 things I want to do before I die.

No guessing please.  If I could tell you more without putting the whole thing at risk, I would.  But I can’t, so I won’t.

Can you share your fave quick and easy dinner recipe.

A quick and easy meal at our house:

Roasted Chicken:  Wash it, stuff it with onions, apples or lemon.  Olive oil on the skin + salt.  Roast  until cooked.

Spinach:  One bag spinach cooked in a wok until it wilts.  Drain off extra water.  Saute one sliced white onion, mix with spinach.  Add one diced onion.  Add a lot of balsamic vinegar to taste.  Throw on a handful of feta cheese.   Sauteed mushrooms are a nice addition.

Couscous – Trader Joes brand.
